PEACH SURPRISE PIE
2 8oz. pkg.
light neufchatel cheese, softened
1/4 cup
sugar
1/2 tsp.
vanilla
1
pastry for 1 crust 9in pie, baked
1 16 oz. can
peach slices, drained
1/4 cup
RASPBERRY FRUIT SPREAD
or USRASPBERRY FRUIT SPREAD
1 tsp.
lemon juice
Combine neufchatel cheese, sugar and vanilla, mixing until
well blended. Spread onto bottom of crust. Chill several hours.
Top with peaches just before serving. Combine spread and juice, mixing until well blended. Spoon over peaches, garnish with fresh mint, if desired.
