2 tbsp brown sugar
2 tbsp molasses
1 tbsp soy sauce
1 clove garlic
2 tsp minced ginger
¼ tsp salt
¼ tsp pepper
5-6 lb chicken, cut into 8 pieces
Preheat oven at 400ºF. Line roasting pan with foil and coat that with cooking spray. In bowl, mix mango fruit spread, sugar, molasses, soy sauce, garlic, ginger, salt and pepper. Place chicken, skin-side down, in pan. Brush chicken with 1/2 cup of mango fruit spread mixture.
Roast 15 minutes. Turn chicken and brush with 1/3 cup mango fruit spread mixture. Roast 15 minutes. Turn chicken and brush with remaining mixture. Roast until chicken is no longer pink near the bone, about 15 more minutes.
