Blackberry Nut Cake
¾ cup butter
1 cup sugar
3 eggs
1 cup
Blackberry Fruit Spread or
US Blackberry Fruit Spread
1 tsp baking soda
3 cup flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 tsp vanilla
1 cup raisins
¾ cup buttermilk
1 cup your favourite chopped nuts
Preheat oven to 325°F and grease two 9 inch pans. Cream butter and sugar well. Add eggs, one at a time and cream after each egg. Add jam. Sift together soda, spices and 2 cups flour. Add remaining flour to cream mixture alternately with buttermilk, starting and ending with dry ingredients. Stir in raisins, nuts and vanilla. Pour into pans and bake for 30 to 45 minutes. Ice with your favourite frosting.
