Linzer Torte
1 cup
butter
3/4 cup
sugar
2
eggs
1 cup
ground almonds
1 cup
flour
2 tsp
cinnamon
2 tsp
baking powder
1 jar
Four Fruit Premium Spread
or Four Fruit Conserve
Beat butter until smooth, add eggs, sugar, almonds, flour, cinnamon and baking powder and blend well. Butter a round baking dish and put in 2/3 of the mixture. Spread the 4 Fruit evenly over dough. Place the remaining 1/3 of the dough into a piping bag with a wide decorator’s tip. Squeeze the dough on top of the jam, creating a weave pattern.
Bake at 350ºF for 50-60 minutes. Use a wooden skewer or toothpick to test if the cake is ready (toothpick should come out dry).
To serve the cake as a dessert, top with a dab of real whipped cream.
For variety try substituting Crofter's Black Currant, Blackberry or Raspberry.
